I mean, I’ve always liked almonds, but only recently have I actually LIKED them. I’d eat the occasional almond nut every now and then, but it wasn’t a big deal. If a pistachio was in the mix, I’d pick that out. But my love affair with the almond changed after myself and the fam went to the art festival here a few weeks ago.

They had swans, tons of pet puppies running around, live music, art vendors, invention people, statue people and… food. Lots and lots of food. And ohhhh how did this food smell good. I wanted to sample everything from everyone, but I only sampled one thing. Cupcakes. And I didn’t go with the normal vanilla or chocolate cupcake. I went with an almond cupcake with cream cheese frosting – and I have to say, it was no mistake… no denying it… I fell in love with the almond.

I’m on my way out to meet some friends but I wanted to throw this post up before I left because I have a little time to myself right now.

This is the mango salsa. I doubled the recipe because I can.

TROPICAL BEAN SALSA
  • 1 RED ONION-DICED
  • 1 MANGO -DICED
  • 1/2 RED BELL PEPPER
  • 1/2 C. CORN KERNELS
  • 1/2 C. BLACK BEANS (CANNED)
  • 2 TBL LIME JUICE
  • 1/4 TSP SALT.
  • 1/8 TSP PEPPER
  • 2 TBL CHOPPED FRESH CILANTRO or PARSLEY

Combine all ingredients and let sit for 10-15 minutes

Mango’s

I know it’s been forever since I’ve had a real post and I made a mango salsa recipe that Karen, a friend from school, gave to me. But before I go into that recipe, I thought I’d share with you how I cut my mangos to make it easier.

First, cut the mango long ways on both sides to cut around the pit.

Then take a side of the flesh, and score it in a diamond or square pattern…

Then push the back side of the mango to invert it and you can cut the flesh of the mango off of the skin…

It was like entering Oz…

I few years ago, Myself, my mom and Mark took a road trip to Texas to visit my Tio and Tia. That was one of the best road trips ever. While in Texas we decided to go Mexico for some shopping. On the drive there we ran into a butterfly storm and killed about 100,000 butterflies (no lie) in our path to the border. I’d like to hold a moment of silence for those butterflies who died in our path that day.

We got to Mexico and it’s 117 degrees F. No lie. We walked around a few blocks, bought some bottles of liquor, had a canary tell our fortunes and saw some awesome knock off Coach bags. After about a few hours we were hungry and about to start seeing mirages so we asked a local there to point us in the direction of a good resturant. The local pointed, and we went.

Shortcake and Swans…

Lately here in Florida, the weather has been beautiful. While my aunt and uncle were in town, we took them to the Art Festival to get out of the house, walk around and enjoy the nice weather. There was lots of pretty art work, TONS of food (omg it was hard not stopping at each vendor) live music, and swans. Yes, swans. The festival took place at Lake Eola, and apparently they are known for having lots of pretty swans. And they are pretty, and not only white ones, but black ones…

Decorating the concoctions….

Lately I’ve just been wanting to do alot of decorating of my food. Valentine’s day I made this, and I decorated some cup cakes with fondant and designs.

I want to share with you what I did.

This is my cake chocolate box. My red fondant didn’t come in on time so I just used white and made a square box instead of a heart shaped one. The candies inside, the ones covered in chocolate, are cake too. You can get the tutuorial on how to do it here.
